Tartufara – Pasta with truffle

Ingredients for Tartufara – Pasta with truffle
For the pasta:
- 100 g of flour 2
- 100 g of flour 1
- 50 g of whole wheat flour
- water
- coarse salt
- extra virgin olive oil
To season:
- 1 small black truffle
- 2 eggs
- ½ red onion
- butter
- coarse salt
- White wine
- Pepper
Preparation
- To ennoble the black truffle we prepare a slightly fru fru recipe. T
- o begin with we clean the onion and cut it (if finer or larger it is a private choice); in a pan let go of a knob of butter and the coarse salt over medium heat, when the butter has liquefied add the spring onion, a trifle of pepper and let it soften with a drop of white wine.
- While the concoction plays its part, we prepare a pasta, which making it is stupid and will give you immense satisfaction: we mix the flours in a boule together with a drop of oil, a pinch of salt and a little d ‘ water.
- We work with the wooden spoon and pour water until the flour absorbs it and the dough becomes compact; then we pour it on floured pastry board and work with our hands (adding flour if necessary) until we obtain a pellet; we take it to “sganassoni” to recall the humidity and to better mix everything.
- Then we let it rest covered for a few minutes.
- In the meantime, beat the eggs in a bowl with a little pepper and salt; then we grate in a generous dose of truffle, mix and keep them aside so that their aromas mix well.
- Then we pick up the dough again, roll it out with a rolling pin (more or less thin, also in this case they are private choices), flour it in order not to glue it, roll it up on itself and cut some noodles that we cook in salted boiling water.
- When the pasta comes to the surface we drain it and dip it in the pan with the onion; risotto with a ladle of cooking water, turn off the heat, pour the egg, jump and serve.
- Finally truffle flakes, as if it rained. “It will be up to you to take a test: you are as horny as it is good … amazing!”
