Burrata with berries and honey
– 1 8oz. package Burrata cheese
– ½ cup raspberries
– ½ cup blackberries
– 1 tablespoon honey
– 1 tablespoon bottled balsamic glaze (any brand)
– Fresh thyme (optional)
– Toasted baguette or artisan bread slices
In a medium sized bowl, lightly mash ¼ cup of each of the berries, leaving the remaining for garnish. Pour berries into a sauce pan and reduce over low simmering heat until juice from berries thickens. Whisk in 1 tablespoon of balsamic glaze. Set aside to cool.
Place room temperature Burrata on center of plate or bowl. Drizzle Burrata with 1 tablespoon of reduced berries and balsamic glaze sauce. Finish with a drizzle of honey and garnish with remaining berries and a sprig of thyme. Serve with toasted baguette or artisan bread.
