Ingredients for 1 person
- Mixed Greens 45 g
- Di Stefano Cheese Burrata 3 oz
- Arugula 20 g
- Grilled Eggplants 65 g
- Grilled Zucchini 55 g
- Farro 50 g
- White Balsamic Vinegar 1tbsp
- Extra Virgin Olive Oil 2 tbsp
- Salt & Pepper
- Cherry tomatoes 30 g
Recipe
- Wash the vegetables and the salad
- In a bowl, place the mixed greens and the arugula
- Cook the farro in a cup of salted boiling water
- Place the farro in the bowl
- Add the cherry tomatoes cut in halves
- Place the grilled eggplants and zucchini
- Add the Burrata in the middle and cut it open from the centre
- Drizzle the Burrata with Olive Oil
- Add Salt & Pepper to taste
- In a cup, mix the olive oil and balsamic vinegar with salt and pepper
- Sprinkle the vinaigrette over your salad bowl
- Mix everything together & ENJOY!
