Burrata is an Italian cow milk cheese, made from mozzarella and cream. The outer casing is made out of solid cheese. While the inside contains the most creamy ingredients. This makes it so that stracciatella cheese only reveals itself once burrata is cut open.
This duality, along with its many health benefits, is what makes it truly amazing, and the key to its unusual, soft texture. Burrata has become a global cheese, but its story originated in the 1920s in the southern Italian Murgia territory (part of the Apulia region), in the outskirts of the city of Andria, under the shade of a castle. It was born out of a need to minimize food waste and is a delicious example of human ingenuity.
Our Burrata is supplied by Di Stefano Cheese, based in Pomona and run by its Apulian founder Mimmo Bruno who runs a family-owned dairy company and he has a lifetime of experience in making cheese paying close attention to the Italian traditions.
