Ingredients for Red cabbage with spiced vinegar 

  • 1 kg of red cabbage
  • 1l of red wine vinegar
  • 10 grains of black pepper
  • 4 bay leaves
  • 6 cloves.

Preparation

  1. Wash the red cabbage, remove the outer leaves, cut into 4 and remove the larger ribs.
  2. Finally cut them very thin.
  3. Put the cabbage in a large bowl and cover with salt, mix well and leave to rest overnight.
  4. The next day drain it and dry it from the salt.
  5. Pour the wine vinegar and spices into a thick-bottomed saucepan, bring to a boil for 3 minutes and then remove from the heat, then divide the cabbage strips between the jars and cover with vinegar, close and protect from light.
